Tsampa, made from a special variety of barley, is the main food of
Tibetans. We eat Tsampa as dough, ground fine, moistened with tea and
butter and kneaded in a ball. This is a nutritious, simply-prepared staple
of our diet that travels easily. We also use Tsampa to make Tsamthuk - barley soup.
Our Tsampa is made from organic barley. After washing and drying the
barley, we roast it in the traditional manner,in a "Langna" pan over high
heat. The we pound it to remove the outer skin, and sift it to retain only
the best part of the grain. We then grind it to a fine texture.
